and it goes…….BIKINI BITES
We thought since we are a swimwear company we should show you recipes that are bikini body friendly…not fatty delicious things you should not be having……maybe once in a while we’ll do some devilish desert, but only because I don’t think you need to rid yourself of all those things all of the time. I call it sweet day. Once a week my older daughter and I (she also loves sweets)have a sweet day. Waffles for breakfast and desert after dinner…she also has a sweet roll from a chinatown bakery on the way to ballet class. HA!
You know I just had a baby (she’s 3 months today) and I think it’s time for me to get serious about losing the weight or else I won’t feel good at the beach this summer. I hope it’s possible to keep breast feeding and lose weight (my acupuncturist thinks so) She suggested to cut out the sugar and don’t eat past 6:30PM…..I can do that…right?
Who wants to try this with me? Come on, I need some support. Let’s start tomorrow…Mondays are great for this.
So for the first BIKINI BITES….Nathaniel makes his yummy Salade Nicoise! You can eat it for lunch or dinner and get full guilt free and is oh soooo good for the body. Don’t forget the summer is coming soon!

You will need:(serves 4)
1/2lb sushi grade tuna
4 hard boiled eggs
12 baby potatoes, or a couple large potatoes(red or yukon gold work well) cut into bite size pieces
green string beans
olives(nicoise olives are the traditional route, but I like to use Kalamatas because you can get them without the pit)
lettuces of your choice…go with what is in season. I used butter lettuce with sorrel and ramp greens(spring season)
For the dressing: If you have time, make dressing about an hour beforehand as the flavors will have time to develop
- hazelnut oil
- meyer lemon
- ramps(white part finely diced)
- dijon mustard
- sherry vinegar
- salt and pepper
Sear the tuna in olive oil over high heat just enough to get some color on each side…about 2 minutes per side. Boil the potatoes, beans and eggs; potatoes and eggs about 10mins, beans 2mins. Remove all three to ice water bath.
Mix all the dressing ingredients except the oil. Slowly drizzle in oil at end until emulsified(mixed good). Slice tuna, peel eggs, cut beans into bite size pieces. Toss lettuces in dressing(reserve some dressing) Plate lettuces and add tuna, egg, potato, beans, olives. dress with reserved dressing. ENJOY
